Steamed Sherry Shape

Cut six slices of any jam-roll or sponge sandwich that has gone a little dry and pour over them one cup of sherry. Leave for an hour, and then lay in a greased pudding mould. Beat three eggs thoroughly, add one tablespoon of cream or melted butter and two small cups of milk, and pour over the sponge. Add the Juice and grated rind of one lemon, cover the mould, and steam for three-quarters of an hour.
