Preserving Peas and Beans (1921)


To Preserve Peas and Beans.

The following directions for preserving peas and beans have been found very successful:

Prepare the vegetables as for cooking, and see that they are quite dry. Put a layer of salt in the bottom of a jar, then a layer of beans, and fill up with layers of salt and beans in this way. At the top of the jar put a good layer of salt. The beans make their own brine. Air earthenware jar is the best to use, and to ensure air-tightness it is us good plan to place a brick on the lid. Before cooking the beans or peas they should be placed in a colander and the tap run on them for a few minutes. After boiling for a short time, strain off and use fresh boiling water, with a pinch of bicarbonate of soda, to finish the cooking.
