How to Make Soft Icing for Cakes (1920)


How to make soft icing for cakes:

Put 1lb. icing sugar into an enamel saucepan, add four tablespoons cold water, and a couple of drops of citric acid. Mix till free from lumps. 

Place the saucepan over a low-gas till the icing is just warm, then pour over the cake. If you find the icing too soft, add more sugar (some icing sugars absorb more water than others). 

This is a soft icing, but it will keep for months.
