This recipe for Ladies' Delight Pickles, attributed to Mrs. Beeton, was published in the Weekly Herald (Adelaide), 8 February 1895. Isabella Beeton (nee Mayson) was best known for her first book "Mrs. Beeton's Book of Household Management" published in 1861. The book, also known as "Mrs. Beeton's Cookery Book", has been in virtual continual print until the present day. According to the Oxford English Dictionary "by 1861 the term Mrs. Beeton had become used as a generic name for domestic authority.
LADIES' DELIGHT PICKLES.
8 ozs. of onions, 8 ozs. of apples, 2 ozs. of chillies, 1 pint white wine vinegar, 1 tablespoon of salt. Chop the onions, apples, and chillies, then boil the vinegar and salt and pour it over the ingredients named before, mix well, and when quite cold put it into small jars. It is to be eaten with cold meat. Mrs. Beeton's recipe.
